Banana-pumpkin bread.
Ingredients:
This bread is delicious with butter, pumpkin sauce or jam.
- Homemade pumpkin sauce (see the recipe in delicious basics) or canned pumpkin puree
- 2 cups of flour (for example 1 cup of spelt and 1 cup of chestnut flour)
- 1/2 cup of rolled oats
- 2 eggs or a replacement like a chia egg or gluten free egg replacer (I use Orgran)
- 2 bananas
- 1/2tsp baking soda
- 1 tsp baking powder
- 1 tsp pumpkin spice
- 1 tsp minced ginger
- 1/4 cup chopped walnuts
- 1/2 cup seed mix (the mix can contain pumpkin seed, flax seed, hennep seed etc, go with your "gut"feeling)
- 1/2 cup dried cranberries
- Mix all the ingredients except the walnuts, seed mix and the cranberries together using a blender
- pour the mixture in a bowl and add the final ingredients and carefully fold them in the dough
- Use a greased bread baking tin and bake the bread for 1 hour in a pre-heated oven on 180 degrees celsius
- Let the bread cool down for 10 minutes before taking it out of the tin
- If you can resist let the bread cool down completely before eating.
