Yoghurt icecream a la rhubarb
Ingredients:
- 250 grams rhubarb pieces
- 150 grams strawberry slices
- 4 tbsps lemon juice
- 1 tsp cinnamon
- 2 tsps grated ginger
- 2 tsps maple syrup (optional)
- 2 tsps rum
- 1/2 tsp vanilla extract
- 1 cup (lactose free) yoghurt
- Cook the rhubarb and strawberry in the rum, maple syrup and lemon juice until soft
- Blend smooth, add all the other ingredients except the yoghurt, blend again
- When cool add the yoghurt and mix, then freeze
