PB banana cookies
Ingredients:
*Leave the cookies to cool down slowly after baking (I cover them with a cloth on the countertop) to ensure a chewy result.
- 120 grams chestnut flour
- 120 grams glutenfree flour
- 1 tsp psyllium fibers
- 1 tsp xanthan gum
- 1 mashed banana
- 2 egg whites
- 1 tbsp butter
- 150 grams of peanut butter
- 1/4 tsp salt, only when using unsalted peanut butter
- drop of almond extract
- optional 1 tbsp cocoa powder and or 1 tsp speculaaskruiden
- Mix the dry ingredients (cocoa powder and spices optional)
- Mix the butter and peanut butter by melting them together in a small pan or microwave
- Add the egg whites, banana and almond
- Mix wet and dry ingredients together , don't overdo the kneading
- Measure 1 tbsp mixture per cookie, flatten en shape on parchment paper
- Bake on 180 degrees celsius for 9-11 minutes, depending on thickness
