Chialicious veggiespread
Ingredients:
- 1 tbsp olive oil (garlic/chili)
- 200 grams eggplant,thin slices
- 150 grams courgette, small pieces
- 2 tomatoes cubed
- 1 tbsp hot berbere spicemix (or any other spicy mix to taste)
- 1/2 tsp cumin
- 1 tbsp red hot sauce
- 1 cup roasted pineapple pieces (see recipe delicious basics)
- 2 tbsp lemon juice
- 2 tbsp chia seeds
- Bake the vegetables in the oil, add the spices
- Using a foodblender mix until smooth,
- Add the pineapple blend again,leave slightly chunky
- Add the lemon juice and the red hot sauce, stir until well combined
- Stir in the chia seeds and chill overnight to thicken the mixture
