Nutty Sweet Potato bread
Ingredients:
500 grams sweet potato,peeled and cut up in slices
2 cups of flour
1/2 cup rolled oats
2 tbsp nut butter
1/2 tsp xantham gum (when using spelt flour)
1 tsp pumpkin spice
1 tsp minced ginger
2 eggs
2 bananas
1/2 cup dessicated coconut
1 tsp baking powder
1 tsp baking soda
Cook the sweet potato until soft, leave it in the sieve to dry and cool
Mix all the other ingredients ,make sure to mix the eggs before adding to the mixture
When the nut butter is very sticky you may need to use your hands to get a more even dough
Mash the potatoes and add them to the dough,fold the dough so the potatoes are combined with the rest of the mixture
Pre-heat the oven to 180 degrees celsius and bake for 1 hour
