Jan's breadpudding, the gluten free way
- 4 cups gluten free bread in cubes, dried in the oven
- 300 grams bananas
- 300 grams strawberries
- 1 can coconut milk
- 2 tbsp peanut butter powder or 1cup crushed nuts
- 1 tsp vanilla extract
- 4 eggs
- 1/2 cup rice milk
- Cover the bottom of an oven dish with the cubes of bread
- mix the remaining ingredients,except the strawberries in a blender
- Cut the strawberries in half and mix them in the liquid
- Pour the mixture over the breadcubes, use a wooden spoon to push down the liquid gently.
- Make sure all the bread cubes are soaked
- Bake in a pre heated oven on 180 degrees for 1 hour
