The E.D.banana bread
Ingredients:
Directions:
- 1/4 cup lactose free yoghurt
- 1/4 cup vegetable oil (for instance rapeseedoil)
- 2 eggs
- 3 mashed bananas (about 350 grams)
- 1 cup gluten free flour
- 1 cup buckwheat flakes
- 2 tsp psyllium husk
- vanilla ,cinnamon to taste
- 1 tsp baking powder
Directions:
- Mix the flour and flakes with the cinnamon, vanilla, baking powder and husk
- Mix the eggs, add to the flour mixture
- Add the bananas, yoghurt and oil and mix to a semi thick dough
- Butter or oil a bread baking pan
- Bake in a pre-heated oven at 180 degrees for 50 minutes
- The bread is done when it sounds hollow, keep in a paper bread bag to keep from drying out.
