3 large eggs or egg replacement (like a chia egg: 1 tsp of chia seeds combined with 2 tsps of water,mix and leave for 5 minutes before adding to the mixture)
2 tsp vanilla extract
2 cups shredded carrots
1/4 cup crushed walnuts
1/4 cup dried cranberries
Mix all the dry ingredients
Mix all the other ingredients except the nuts and cranberries together in a different bowl
Add the dry mixture to the wet mixture and stir together until just combined
