Spicy tomato soup with green herbs
Ingredients:
Directions:
- 1 kg tomatoes
- 2 tbsp olive oil
- handful of fresh parsley,chives and cilantro
- vegetable broth 300-500cc depending on the desired thickness of the soup
- 1/2 tsp red hot sauce
- mozzarella 125-150 grams, if lactose is an issue replace with a hard cheese like emmenthaler
- Thyme twigs
- bay leaf
Directions:
- Cut the tomatoes in pieces and mix with oil and the parsley, chives and cilantro
- Bake in a pre-heated oven on 200 degrees for 30mintues
- Use a blender to smoothen the mixture then add the vegetable broth
- Let the mixture simmer for 20 minutes with added bay leaf and thyme
- Before serving remove bay leaf and thyme, add the mozzarella (cut into thin slices)
- Sprinkle some fresh parsley over the soup.....enjoy!
