Salad side dish
Ingredients:
4x small handful rucola sald
4x small handful of grated carrot
4 tbsp parmesan cheese grated
1 large mozzarella
1 large tomat1 tbsp olive oil
1 handful cut up parsley
pinenuts or other sprinkle on to taste
Cut the tomato and mix with 1 tbsp of oil and parsley
Bake in a pre heated oven on 180 degrees celsius for about 20 minutes, allow to cool
Use 4 small dishes, and cover the bottom with rucola and the grated carrot
Sprinkle 1 tbsp parmesan per dish over the salad
Cut 4 thicker slices of mozzarella and add to the salad
Top off the salad with the tomato slices
Sprinkle with pine nuts, crumbled roasted potatoes .......to your own taste
Serve dressing seperately.
