Waking up with light peeking through the curtains........yesssssss. Definitely a sign that Spring is coming closer, slowly but surely, with longer days, more light. What also helped was that the sky was cloudless, no rain, so the sun had it easy this morning. Good morning! Not only does it help me start the day kind of cheerful (I am NOT a morning person perse), but it also makes my hands itch. The garden is always a bit sad so right after the winter but although I would love to start "digging" common sense says no. So I did the next best thing and went to shop at the local gardencentre with our daughter,who is luckily always in the mood for Spring shopping. Here is the result; The best of both worlds; a nice afternoon and a promiss of spring, which hopefully is not too far away!
This is what my runners looked like after this morning's jog....do I need to say more? In short a very cold and rainy day and that calls for comfort food!
For me comfort food is.....soup, warm and creamy soup. So for lunch I checked my vegetable drawer and realized I really need to go grocery shopping again. That's what you get from cooking with fresh supplies....regular trips to the store. Luckily I made a batch of parsnip sauce which I love to use for soup, parsnip-sweet potato soup. Of course comfort food is more than soup in this house; another favorite is bread, cake-bread, bready cake, whatever you want to call it, as long as it goes with coffee. ;) Stay dry and warm! Our kitchen is not very big and I was quickly running out of storage space.
My husband offered to put extra shelves in cabinets-without a designated purpose, an offer I accepted with both hands! This resulted in two happenings, a lot of extra sorage room and.....a major re-organisation of the kitchen cabinets. You know what it's like,once you begin, don't stop until it's all done (even if it takes a few hours). I'm happy to say....we did it and sooooooooooo happy with the result. For lunch I decided to prepare a nice warm dish, after all that hard work we needed some new energy. A bag of fresh spinach, mackerel and two eggs did the trick (see my recipe for the spinach-mackerel spread) and we were ready for the afternoon. We had planned to visit an African art statue garden here in the area, http://www.beeldentuinmaastricht.nl/ This garden is run by volunteers. Unfortunately, due to springbreak, the garden was closed! It looked beautiful, even just through the fence,so we'll plan a re-visit short term. On the bright side it left me with a bit more time to prepare dinner....... Parsnips were on my mind so you can guess what the main vegetable on tonight's menu was. Parsnips and potatoes from the oven, salmon with homemade dill-mayonaise and I started on the parsnip soup for tomorrow evening. Weare ready for a new week! Why is it that on the saturday time seems to be going much faster than on any other day of the week?
After working out, grocery shopping,library visit and loads of other little jobs there's just not enough time left to do all the other things I was planning.......... The good news is that today I will upload my first recipe, a very simple one but then again....it is a start! Hope you're having a good day, enjoy everything ;) Let's start.....easier said than done!
Where to start would be the first decision to make. Quite a few years ago I started having tummy trouble,quickly diagnosed as IBS. Later on this was re-diagnosed as fructose malabsorption. Now of course we have the low fod map diet, a way for all of us to tackle those tummy issues. But this blog will not be about having issues but how to deal with them. Cooking, picking the right ingredients, trying out new things. Sports, feeling healthy.....all that good stuff. Hope you'll join me in enjoying life.....Life is good! |
