Avocado is a very versatile fruit to use for cooking and baking.
It has a creamy texture and a not overbearing taste ....perfect to mix and match!
It can be tough to find "good"avocados in the store, when in doubt just flip off the little top of the fruit.
If the fruit looks nice and green it's still fresh. (see pictures below)
Also check the firmness;
You can tell how ripe an avocado is by gently pressing into the skin. If the avocado is firm and does not budge, you will need to let it ripen for a few days before consuming. Soft avocados make great guacamole or dip, while firmer avocados are great for slicing and adding to a salad or a sandwich. To speed up the ripening process, place an avocado in a paper bag with a banana!
Since I can handle about 1/2 avocado per meal I looked for recipes doing just that...so here we go!

- 1 tbsp (courgette) pesto

Chilled Avocado soup
Ingredients:
Leave the tomatoes to cool down.
Mix the tomatoes with the soupand chillfor a few hours.
Before serving add a spoon of creme fraiche and fresh cilantro per bowl/plate.

- 1/2 cucumber grated
- 1 tbsp limejuice

Avocado egg from the oven
Cut an avocado lengthwise and remove the core.
Crack an egg and drop this carefully in the hollow part of the avocado,repeat for the other half.
Add spicesand grated cheese.
Bake in the oven at 220 degrees celsius for 10minutes.
Serve with small strips of toast.
