You probably know that feeling, every now and again after dinner....coffee and....mmmmmmmmmm and what?
Dessert, a cookie, anything sweet will do really.
That's when the going gets tough I think, the times that you really have an urge for seetness.
Luckily it doesn't happen to me very often and when it does there's only one solution: When the going gets tough, the tough are in the kitchen and bake!
It is truely difficult to find sweet stuff in the grocery store that fits in my low fodmap restrictions,
Even if they do there's usually so much "ok"sugar in there that it's not "ok"for me!!
But complaining won't help, just roll up those sleeves and bake.
Last night I decided to try out a recipe I found a long time ago for an upside down banana foster cake.
As always I find it works best to get all the ingredients out, ready to go.( to avoid too many sticky cupboard handles)
Bananas....check
almond flour.....check
almond milk...check
cinnamon, eggs...check
sugar.....2 cups....what???
2 cups of sugar for 1 cake is just a bit over the top and toally unnecessary, I hope you agree.
It is so easy to bake a tasty cake without any extra sugar, who needs sugar?
I've tweaked the recipe a bit, here and there, I think you can guess which part was tweaked most. ;)
The cake was gorgeous but in my enthusiasm to make the recipe my own no photographs were taken......
This means I will HAVE to bake it again soon, really soon because you NEED this recipe, aaaaaaaagh!
