While ordering photos from our recent trip to Switzerland I felt the "urge " to take a little trip down memory lane and bake one of our favorite dishes with a Swiss twist....Quiche a la Suisse.
With the elimination diet still going strong it took some adaptions to create a dish that would also be appealing to me!
Luckily I had brought plenty of supplies to Swiss .....we had this for lunch on the mountain.
So in a way this is a truely original Swiss recipe!
If there is something readily available in Switzerland it's cheese, back home I had to make do with the cheeses available here.
Not a big problem though, it still tastes great!

For this recipe I used Emmenthaler cheese and Old Amsterdam, both cheeses with a strong taste.....yum!
Since we are limiting eating meat to once a week Quorn pieces were added to the cheese.
A new ingredient for me but I'm very impressed with the taste and substance.........a definite yes on our grocery list.
For added flavor one of the added spices in this quiche is Ras al Hanout, a warm spice blend which really compliments the cheeses.
All in all a very nice way to get that vacation feeling back!

Also I have been baking banana bread in accordance with the diet.
Without the options of almond and haselnut flour , seeds etc.it has taken me a while to figure out a recipe I like,simplicity at it's best!
To get enough moisture and taste in I have been using lactose free yoghurt and rapeseedoil.
Psyllium husk helps to make the bread more airy.
