She goes everywhere with me, a bit too strict for my idea of fun but if I need advice she is always willing to help.
My green low fodmap list is here to stay for quite a while.
I have followed the low fodmap diet for a few years now.
Not a good thing really because this diet isn't designed for long term use.
It is also very difficult to be totally accurate because it is quite a tricky diet as well.
That is why you need to work with a dietician to get it right, finding a dietician specialized in the low fodmap diet was quite hard.
When I was told about this dietician I felt now was the time to get down to business and try and figure out what food stuff I can't handle.
How does it work;
You follow the elimination diet for 6 weeks, then when (if) you are free of IBS symptoms you can start re-introducing food types.
The elimination diet is pretty restricted, so I have spent quite a few hours already with my dietician to figure out .....everything really.
(luckily she's very patient!)
Of course having a no meat and no dairy menu adds to the complexity but if possible that is the way I would like to keep it.
Looking at the list I did feel like lost a few good friends;, chia seeds, walnuts, green beans, soy yoghurt.......banned to the basement for a few weeks.
But this is also the time to try out some new things that are on the list but were not in my kitchen cupboards before.
Tapioca, fresh papaja, Doerian fruit, polenta.......already I feel the urge to roll up my sleeves and cook.
I think that might be the best way to do this, just accept the challenge and go for it!
When I was getting ready to cook dinner tonight I realized the pesto I had made during the weekend wasn't in sync with what I can eat now.
Pesto is used in everything in my kitchen ; gravy, salad...........aaaaaaaaaaaaagh.
This is a new pesto recipe , very yummy and very "green". ;)

Add all the ingredients to the food processor and mix to a smooth pesto
Enjoy!
- 3/4 cup rapeseed oil
- 20 sundried tomatoes
- 1 cup brasil nuts
- fresh basil 5 leaves
- parsley 1/2 cup
- chives handful
- 20 black olives
- 2 cups rucola salad
- 2 tbsps ricewinevinegar
- 2 tbsp ginger puree
Directions:
Add all the ingredients to the food processor and mix to a smooth pesto
Enjoy!
