As promised two more spinach recipes and since Popeye showed up 2 weeks ago........it's a simple case of equal treatment!
The next two recipes are a great combination, soup and mini wraps.

Spinach soup
A spicy,filling and superduper healthy soup.....what else do we need?
Ingredients:
Directions:
1. Cook the lentils in the stock for about 15 minutes
2. Bake the carrots in the garlic olive oil , add the zuchini and the spices, bake until soft.
3. Add to the stock and mix in the spinach
2. Leave to simmer for 10-15minutes and you're ready to go
When using canihua, you can add this to the stock with the pre-baked veggies,no need to cook first.
Then add the spinach and let the soup simmer for about 15minutes.
For a creamier soup try adding a can of coconut milk, a great combination with the flavor of kurkuma.
- 1 1/2 liter stock
- 1 tbsp grated ginger
- 1 tbsp grated lemongrass
- 2 tsp kurkuma
- 1 tsp pepper
- 50 grams grated carrot
- 400 grams spinach
- 1 cup dry lentils or canihua (coming up soon.....new blog; canihua , quinoa's little friend!)
- 1 grated zuchini
- 1 can coconut miil

2. Wilt 3 cups of spinach
3. Blend 100 grams feta cheese, 5 sundried tomatoes and 50 grams of carrots
4 . Wrap and serve with the soup (or with any other soup,or by itself, or .......you'll think of something!)
