Because not only is it a healthy ingredients, it is also very versatile and I can handle it very well (which is exceptional for me when eating beans....).
Good thing I ordered a bigger supply the second time around!!
This was a fun recipe to work on; I like making bread (kneading dough is a very relaxing job I think) and the combination with the red paste gave it an interesting twist.
Since I had no idea how this would turn out (the original recipe was not for gluten free bread) I made a few smaller batches at the same time.

Red bean buns
Ingredients:
Mix all the ingredients except the red bean paste,don't overwork the dough.
(The cakemix should give it some extra air)
Form the buns ,using your creative skills , by folding the dough around a tbsp of red bean paste per bun.
Bake in a pre-heated oven on 180 degrees celsius for 25 minutes.
Serve immediately ....enjoy!

- 1/2 cup cake mix (I used teff cakemix)
- 1 1/2 cup gluten free bread flour
- 1 tsp xantan gum, baking powder, baking soda and psyllium fibre
- 2/3 cup cooking cream
- 1 egg
- 1 cup ricemilk

This time I had some beanpaste left over and was thinking of a recipe for dessert.
Having adzuki beans for dinner and dessert is too much for my tummy but luckily this dessert keeps very well in the freezer: ice cream!
Simply use 1 cup sweet red bean paste , add 1 extra cup fruit (really anything goes, pick your favorite) and blend together.
Tadaaaaa, let the freezer do the rest of the work for you, red bean icecream!
Now all we need is some sunshine and rising temperatures for that Aloha feeling...patience patience!
